Butternut Squash Soup

I made my first butternut squash soup! Saturday - I picked up a couple of squashes from the farmer's market downtown, lugged them home on 2 subways and 3 buses, peeled them and cubed them, boiled and "pureed" with a wooden spoon, only to have the entire double batch of soup eaten by Sunday. Yes, just by Eric and myself. But it was reeeeally good and so much easier than I would have thought. I think it's becoming a winter staple.
