I Heart Beets!

Yesterday while at the Farmer's Market I came across some beets. I always come across beets actually. But usually I snub my nose at their twisty tails and their over leafy, as-far-as-I-know inedible green tops. But this time I stopped and bought a bunch. I came home and decided to experiment. Here's what I came up with and I L-O-V-E-D them. So much so I may go out and buy tomorrow just so I can have more on hand. And no other dyes my hand such a lovely shade of purple. (anyone know how to get that off by the way??)

Steamed Beets

1 bunch of beets
2 shallots chopped FINE
1 tsp apple cider vinegar
1 tbsp butter
1/2 Tbsp Agave (sugar can be used here too)
2 Tbsp chopped pecans
sea salt to taste

Peel and chop beets into slices and steam until soft enough to eat but still maintains a crunch. Then mix with remaining ingredients.
