When people ask what was the best part of our trip, I have to say, hands down, that it was the food! I came back with so many recipes and ideas I wanted to try out. Here are some of the current favorites:
Brown Butter Sauce
1 stick of unsalted butter
6 fresh sage leaves
1/2 tsp of salt
1/4 tsp of pepper
pinch of fresh nutmeg
1/3 cp parm cheese
In a large frying pan, melt the butter over medium heat until pale golden - about 4 minutes. Add the torn sage leaves and cook until crsip, about 2 minutes. Stir in the salt and pepper and nutmeg. Season the sauce with more salt and pepper to taste. Sprinkle with parmesean cheese.
We like to serve it over penne pasta with peas

Salt
Olive Oil
5 Garlic Cloves
1 tsp red pepper flakes
1/4 chopped flat parsley
1 tbsp fresh basil
1 tbsp fresh mint
Make spaghetti. Don't rinse and keep 2 tbsp of the cooking liquid.
In a saute pan, heat the oil over a medium flame. Add garlic and saute until golden. Use a slotted spoon to remove garlic. Add red pepper flakes and saute for 1 minute. Carefully stir in the reserved cooking liquid and salt. Immediately add the drained spaghetti and toss for 1 minute. Season with more salt and red pepper flakes to taste. Sprinkle with herbs and serve!

I just made the brown butter sauce for myself tonight but I didn't have sage so I used Italian seasoning. I'm pretty sure it wasn't as good as yours, but still really really good. I ended up dumping most of it into a bowl with spaghetti and after I had eaten almost all of it I realized that I was nearly eating a whole stick of butter and I stopped.
...now I'm eating nutella.
